    I love this machine but it cracks in the bottom of the bowl after using 5 times as shown in the photos. Need a replacement.

    My wife and I had researched, read positive and negative reviews, and “YouTube’d” many products before this purchase. We grind our own wheat, and thought that this pasta maker would be the perfect compliment to our efforts, both at home and for our RV. We were right! We followed the recipe for whole wheat pasta, and, without a flaw, we made perfect pasta ….. spaghettoni, fetuccine, penne, and conchigliette…. multiple times. We are planning on ordering the Grissini Bread Stick disk very soon.

    We did experience a problem on one occasion. The ring nut that holds the extruder disc against the rotary screw has a tendency to slightly rotate when first extruding pasta, even after following the careful instructions to pass some dough through prior to installing a disc. I typically use the included wrench to hold the ring nut until it holds steady, but I choose to hold it with my hand on this occasion, when the ring nut cracked, making it impossible to complete my pasta extrusion.

    We contacted Lello via email, and WITHIN 30 MINUTES on a late Friday afternoon, we received a response with an apology and that they had sent replacement ring nuts by Express Mail. WHAT GREAT CUSTOMER SERVICE!

    It took me a good month to figure the dough out. But basically, you want the dough to look WAY TOO DRY, crumbly, you’ll want to add more water after 5 minutes…but DON’T!! That crumbly dry stuff after 10-15 minutes will turn into small pieces, (half walnut size as they explain in the book) and the pasta will pop out perfectly. It should take no more than 15 minutes for 1.5 lbs of pasta, otherwise your dough is too wet. (Maybe others have done it faster?) For a month I would have to stop the machine, break up the dough, shove it through, etc, like other reviewers are saying, and it would take forever to get a pound of pasta, but once I figured out that the dough should look really dry, it works like a charm! Love it!

    I’ve had this pasta maker for about a year. It took me a while to figure out the correct procedure with the ingredients (eggs and recently semolina flour I was using. Yes, optimally, the mix should be in small chunks so that it falls through the door in the bottom of the mixer. I’ve found that it it is quite tolerant of variation in the moisture content. They thing to avoid is a big blob. One of my big problems in the beginning is that when i put eggs and flour in all at once, the four would cake up on the bottom. To avoid this, put less flour in at the start. Then when the mixture gets to the big blob stage, gradually add the flour until you have the desired small chunk consistency. Also, i’ve found that it’s very important to let the extruder “warm up” by running dough though it for a few minutes until it comes out nice. then throw the ragged stuff back into the mixer. The cleaning tip in the book is to let it dry overnight after use and tap the parts and the dried flour will fall out. That’s pretty good. I’ve more recently had good luck with soaking for 2-ish hours in warm water and then getting the flour off with a cleaning brush. Then in the dishwasher.

    (I gave the machine 4 rather than 5 stars because it’s good and met my expectations. I’m very demanding for 5 stars. Like my coffee machine that you but beans and water into the top, push a button and espresso comes out the bottom and only requires cleaning once a week! so enjoy! 🙂 )

    I’ve been making pasta by hand since I was a child. There is nothing better that fresh, home made pasta! After reading all comments on Amazon I decided to give this machine a chance.
    I followed instructions exactly and carefully weighted flour and measure eggs. I’ve spent 15 minutes staring through the lid to see the dough mix. It is hard to believe that machine can mix to such a hard consistency! Several reviewers were complaining about the sound of the motor while working, it is loud, but not really disturbing, beside that it didn’t sound like motor was suffering. After my experience with bread maker I was expecting my first past making to be complete failure. I tried linguini first and….they came out great!!! Spaghetti and rigatoni as well!!! I could not believe it!!! Then I made some lasagna sheets, great as well!
    I love this machine and great instructions provided. If you want your pasta to come out good just follow the receipt.

    I mill my own wheat. I hand make pasta. I’ve used KitchenAid and Bosch mixers with pasta attachments. All of the extruded pasta fine IF you get the wet and dry ratio PERFECT. None of them MIX pasta like the Lello.

    My Lello 3000 was delivered in great shape yesterday afternoon.

    I milled Durum and sifted together with unbleached KA flour following the Lello recipe. My mix was a little wet so extrusion was slower than it should have been but pasta was PERFECT.

    I made two lasagna, cooked one and froze one. Then I switched disks and made 3/4 lb elbow macaroni, which I dried and froze.

    I found the noise level quite acceptable. Less so than several of my kitchen appliances. The Lello and all the attachments are built like a Sherman tank!!

    After searching long and hard I believe I’ve found pasta nirvana!
