    Overpriced when you look at all the cheap plastic in the unit. Not what I expected from a zwilling product.

    I’m a regular home cook without culinary training except for what I watch on cooking shows. This sharpener was easy to setup and use straight out of the box. I recommend watching the 2mins YouTube video on sharpening even though the manual is quite detailed. I sharpened an old calphalon 5.5” santoku which cut tomatoes paper thin afterwards. I did 10 passes on the B adapter using the coarse grit, then 10 passes on the A adapter using the fine grit. [This review was collected as part of a promotion.]

    I wanted this because the pull through sharpeners are only okay and stone sharpening is such a process. This combines the best of both worlds. I organized my knives into Japanese and German, swiped them through at the higher grit 10 times each then switched to the lower grit. Then I set it for my Japanese knives and did the same thing. It took maybe five minutes once I read through all the instructions to get brand new knives.

    It gets the job done, albeit very slowly. It is necessary to pay close attention to any slight angle you might hold your hand. It might mean the difference between a fully sharpened blade or simply a sharpened side of the blade. Overall, I am happy I purchased it, but it won’t replace the company that sharpens my blades. It will only make those visits yearly instead of more often.

    I had been looking for a manual knife sharpener as my set of Asian-style/German steel knives had gotten very dull. Purchased this on sale, and recently used it for the first time. Very easy use once I reviewed the instruction manual, and love the easy way to store the sharpening blocks (one set slides underneath inside the arms you aren’t using, one set in the unit itself.) My knives flunked the
    “tomato test” before sharpening, then passed with flying colors after sharpening. So happy I will be able to maintain a nice sharp edge since I am cooking a LOT more these days!

    Sharpener is much coarser than I expected. can not compare to edge produced by the water stones. Sadly, it is destined to the back up shelf. And sadness for money spent on a sharpener that is well below the quality required by the Friodur blades. If you have the lesser quality blades, it’s probably fine for repairing a blade that been cutting course items. Bottom line, pretty much a gimmick.

    [This review was collected as part of a promotion.] I have both standard American knives, Zwilling & Wusthuf, and I also have 2 Japanese knives. This tool allows me to sharpen both types. It even restored the cutting edges of some older ‘no name’ knives. Very happy with my purchase.
